Veal & Chutney Toasties

Veal  & Chutney Toasties Ingredients
  • 2 lean veal escalopes
  • 1 small onion peeled and sliced
  • 1 tbsp of fresh thyme leaves
  • Salt and black pepper
  • 2 tbsp of Dijon or wholegrain mustard
  • 3 tbsp of light or reduced calorie mayonnaise
  • 4 slices of ciabatta
  • 50-75g vintage Cheddar Cheese, sliced
  • 15ml/1tbsp olive oil
  • 2 tbsp of prepared onion chutney
  • Rocket leaves to garnish
 
Method
  1. Heat half of the oil in a non stick frying pan or griddle. Add the onion and thyme and cook over a low heat until the onions are soft. Transfer to a small bowl and set aside.
  2. Season the veal and cook for 1-2 minutes on each side until brown.  Set aside.
  3. Add the chutney, rocket leaves, veal and onions and sandwich together.
  4. Serve with chunky chips and a side salad.
